Oven Baked Chicken

We made the following for dinner tonight, the preparation super easy (about 10 min.) which is my kind of recipe. The chicken came out incredibly moist, and tasted wondeful. The whole family cleaned their plates. Went great with a salad as well.

Oven Baked Chicken

Ingredients:
2-3 pounds boneless chicken breast
1 cup dried bread crumbs
1 teaspoon garlic powder
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon dried thyme
1/2 teaspoon paprika
1/2 cup mayonnaise

Directions:
  1. Preheat oven to 350 degrees.
  2. In medium bowl or large zip lock bag mix together all the ingredients (spices and bread crumbs), except for the mayonnaise and chicken.
  3. Coat the chicken breasts with mayonnaise, and then roll them in the bread crumb mixture until well coated.
  4. Bake chicken breasts for 40 min at 350 degress, and then 15 min at 375 degrees.

One other tip that I read which worked well, was to bake the chicken on cookie cooling racks which were sitting above the dish in the oven. This allowed air to flow all around the chicken and make sure the bottoms were not soggy.

I know the mayonnaise on the chicken might turn a few of you off, but give it a shot. I promise you do not even taste the mayo, and it turns out oh so moist and delicious.
